Hello to all my dedicated food enthusiasts! Today, I am absolutely thrilled to share a beloved creation from my kitchen, something that combines robust flavours and satisfying textures. Please allow me to present ‘Spicy Serenade’, a delicious spicy tomato sauce noodle dish that integrates the sweetness of corn, the crunch of sesame seeds, and the fresh bite of spring onions. It’s a plant-based wonder that you’re going to adore!

Ingredients
- 300g dried noodles of your choice
- 2 cans of chopped tomatoes
- 1 large red chilli, finely chopped
- 2 cloves of garlic, minced
- 1 can of sweetcorn, drained
- 2 spring onions, finely sliced
- 2 tbsp sesame seeds
- 2 tbsp vegetable oil
- Salt to taste
Instructions
- Cook the noodles according to the packet instructions. Once cooked, drain and set aside.
- In a large saucepan, heat the vegetable oil over medium heat. Add the garlic and chilli, and sauté until fragrant.
- Add the chopped tomatoes to the pan and season with salt. Allow the mixture to simmer for about 15 minutes until it thickens into a sauce.
- Stir in the sweetcorn, and let it cook for a further 5 minutes.
- Toss the cooked noodles in the tomato sauce until well coated.
- Serve the noodles in bowls, garnishing with a sprinkling of sesame seeds and a handful of spring onions.

Feel free to adjust the amount of chilli to your taste. You can even use a mild chilli if you prefer less heat.
For an added protein boost, you can toss in a can of rinsed and drained chickpeas or black beans.
To ensure your sesame seeds are super crunchy, you can lightly toast them in a dry pan over low heat until golden before using as a garnish.
