Please allow me to present ‘Spicy Serenade’, a delicious spicy tomato sauce noodle dish that integrates the sweetness of corn, the crunch of sesame seeds, and the fresh bite of spring onions. It’s a plant-based wonder that you’re going to adore!

Ingredients

  • 300g dried noodles of your choice
  • 2 cans of chopped tomatoes
  • 1 large red chilli, finely chopped
  • 2 cloves of garlic, minced
  • 1 can of sweetcorn, drained
  • 2 spring onions, finely sliced
  • 2 tbsp sesame seeds
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Cook the noodles according to the packet instructions. Once cooked, drain and set aside.
  2. In a large saucepan, heat the vegetable oil over medium heat. Add the garlic and chilli, and sauté until fragrant.
  3. Add the chopped tomatoes to the pan and season with salt. Allow the mixture to simmer for about 15 minutes until it thickens into a sauce.
  4. Stir in the sweetcorn, and let it cook for a further 5 minutes.
  5. Toss the cooked noodles in the tomato sauce until well coated.
  6. Serve the noodles in bowls, garnishing with a sprinkling of sesame seeds and a handful of spring onions.

Feel free to adjust the amount of chilli to your taste. You can even use a mild chilli if you prefer less heat.

For an added protein boost, you can toss in a can of rinsed and drained chickpeas or black beans.

To ensure your sesame seeds are super crunchy, you can lightly toast them in a dry pan over low heat until golden before using as a garnish.
