Preparation
This recipe uses brown sugar, but you can use any sugar you have available.

Caramelised Bananas
Add some healthy indulgence to your breakfast porridge.
- 1 small banana (sliced)
- 2 tbsp brown sugar (or caster or coconut sugar)
- 1 tbsp coconut oil
- pinch salt
- 1/4 tsp cinnamon (optional)
Slice your banana into 1/2 inch rounds.
Add oil to a wide-based pan and heat over medium high heat.
Add sugar and salt to the pan until melted and starting to bubble, then add the bananas.
Cook bananas until light to golden brown underneath, about 2-3 minutes (you can lift with a spatula or fork to peek).
Gently flip bananas over to brown other side, turning the heat down to medium. The second side will brown in about one minute.
Eat as a yummy snack, top on porridge or with ice cream!
- Be careful not to overcook or burn them (if you smell them browning, or see colour in the pan, flip them right away). Keep in mind these times will vary, depending on your stove.
